Greece’s oldest hard cheese, Batzos was traditionally made by nomadic shepherds in the mountains of northwestern Greece centuries ago. At the Kourellas family dairy, we follow the same time-honored recipe. Strong and slightly spicy, batzos makes the ultimate grilled cheese – crisp on the outside, oozing on the inside.
